Through the years this has become my personal mixture; I created it originally for Arcadia, the quiet, and refined fine-dining restaurant at 21 East 62nd Street, and Ms. Anne Rosenzweig, its young and brilliant three-star chef who brewed Arcadia's coffee in a Bunn® brewer. The blend is also “Passing Fair” (a wonderful old archaic expression) when brewed as a single serve Café Filtre, or in a French Press. Prepared as an espresso, it produces a lightly frothy straight espresso of the Northern Italian style. I recommend it after dinner, paired with a light desert, and served with light cream or half-and-half, and blond sugar. If you are serving it as an espresso, it is shown to its best advantage when put out without the benefit of steamed or frothed milk.
