Because the first substantial Italian community in New York was Sicilian we New Yorkers thought all Italy roasted "black," and so the bean color our new customers wanted was, "Italian" to us. With a respectful nod to my departed friend Ernesto Illy, I have lived and learned. Still, the name "Italian" shines on the labels of the darkest beans from traditional New York roasting houses.
