La Pastora

The first coffee trees were planted in the San Marcos de Tarrazu Valley of Southwest Costa Rica in 1850. They grow at 1200-1800 m. (about 3,900–5,900 ft) in the magnificently rugged “Land of the Saints”; rich with red volcanic soil, and surrounded by the Talamanca Sierra mountains. The district’s coffees have a distinct intense flavor, and full body for which the Tarrazu mark is famous. La Pastora Costa Rica Tarrazu represents some of the very best cherry from the Tarrazu valley.

La Pastora Tarrazu is the mark of CoopeTarrazu a motivating economic force in the area since its founding in 1970, representing about 2,600 member farm families, and employing as many as 10,000 souls at the height of the season.

The Coop offers its members technical assistance, low interest financing, supported pricing on ground nutrients and fertilizers, and educational programs to help members incorporate best practices and newest methods for improving the quality and increase the production of their produce. the state owned insurance company, Instituto Nacional de Seguros (INS). offers an occupational safety program to co-op members.

CoopeTarrazu handles everything for its members from the harvest through milling, and marketing. The resulting coffee is clean with compelling fruity aromatics which dear friend, Erna Knutsen once likened in the best Costa Ricas to a, “blueberry nose”. It's crisp flavor, edgy acidity, medium-full body and subtle cocoa notes echo the keynote taste of superior high grown coffees of Costa Rica's Canton of Tarrazu. It leaves 'em breathless, and begging for more.

A good coffeeman of my acquaintance, Sweet Maria’s Thompson (Tom) Owen has written, “Sure, you can dark roast a Costa but ...Are you nuts?” I couldn’t agree more. Gillies Standard™ Roast - DNS
